Taco night is one of those rituals I refuse to let a little foil packet ruin.
I know that sounds dramatic. But once you start reading ingredient labels — really reading them — it’s hard to go back. Most store-bought taco seasoning packets are full of things I’d rather not put in my body: maltodextrin, silicon dioxide, “natural flavors” that aren’t natural in any way I recognize, and often hidden soy derivatives. As someone with a soy intolerance and a handful of other food sensitivities, I’ve learned the hard way that I can’t just assume something is safe. I have to know.
That’s why making my own homemade taco seasoning has become one of my favorite little kitchen habits. Five minutes. A handful of spices. And I know exactly what’s in it.
Why I Make My Own Seasonings
I’m all about eating food without added preservatives — as close to whole and natural as possible. It’s something that matters to my health and feels important to the way I live.
When I was first figuring out my food sensitivities, everything felt overwhelming. So many “simple” foods were tripping me up, and I couldn’t figure out why. Turns out, a lot of it was coming from the packaged foods and mixes I was using without a second thought. Once I started making my own, so much of that cleared up.
I also believe in self-sufficiency. I love learning homesteading skills — old and new — and every little recipe I master at home is one more step toward a more intentional, grounded life. Homemade taco seasoning is an easy place to start. If you can stir a spoon, you can make this.

What’s in Homemade Taco Seasoning?
Everything in this blend is a single-ingredient spice. Nothing hidden. Nothing processed. Just real food.
Here’s what each one brings to the mix:
- Chili powder is the base. It carries heat, earthiness, and that signature taco flavor we all know. Use mild or hot depending on your family’s preferences.
- Cumin is non-negotiable. It’s warm and slightly smoky, and it’s what makes tacos taste like tacos. Don’t skimp on it.
- Smoked paprika adds a gentle smokiness and deep color. I prefer smoked paprika over regular in this blend — it gives the seasoning more complexity without any extra effort.
- Garlic powder and onion powder add savory backbone. These two together create rich depth without needing to chop anything.
- Dried oregano adds a subtle herbal note. I use dried oregano that I grow myself, but storebought works just as well.
- Ground black pepper brings a little sharpness and warmth that rounds everything out.
- Fine sea salt ties it all together. A good quality sea salt really does make a difference in the final flavor.
- Red pepper flakes add a gentle kick if you want it. I keep mine optional and light because of my own sensitivities, but feel free to dial it up if your family likes more heat.
Homemade Taco Seasoning Recipe
Prep time: 5 minutes Yield: 1 cup (about 16 servings, 1 tablespoon each) Storage: Up to 6 months in an airtight jar
Ingredients
- 5 tablespoons chili powder
- 3 tablespoons + 1 teaspoon ground cumin
- 1 tablespoon + 2 teaspoons smoked paprika
- 1 tablespoon + 2 teaspoons fine sea salt
- 1 tablespoon + 2 teaspoons ground black pepper
- 2½ teaspoons garlic powder
- 2½ teaspoons onion powder
- 2½ teaspoons dried oregano
- ½ teaspoon red pepper flakes (optional)
Instructions
- Add all spices to a small bowl and stir until evenly combined.
- Transfer the blend into a small glass jar. A funnel makes this easy and mess-free.
- Seal the jar, label it with the date, and store it in a cool, dark spot in your pantry.
To use: Brown one pound of ground beef, turkey, or chicken. Drain any excess fat. Add 2–3 tablespoons of the seasoning blend and ⅓ cup of water. Stir and simmer for 5 minutes until the liquid reduces and everything is nicely coated. Add 1-2 teaspoons of corn starch to thicken if desired.
Tips for the Best Results
Buy single-ingredient spices. This matters more than people realize. A lot of spice blends — even individual ones — have hidden fillers, anti-caking agents, or soy-based additives. I read every label. Look for spices where the only ingredient is the spice itself. Your local bulk food store is often a great source for this.
Smell your spices before you start. Open each jar and take a good sniff. A spice that’s lost its aroma has lost most of its flavor too. There’s no point in measuring out a tablespoon of something that tastes like dust. When in doubt, replace it.
Mix in a wide bowl, not a small one. It sounds minor, but giving yourself space to stir means everything gets evenly combined. Uneven mixing means some scoops are heavy on one spice and light on another, and your tacos will taste different every time. I like using a large glass measuring cup – it has a pour spout.
Read your labels when cooking for sensitivities. If you’re managing food intolerances like I am, this recipe is already a big step in the right direction. Just double-check that each spice you’re using is processed in a facility that’s safe for your needs. Making it yourself puts you in control in a way that a store packet never can.
How to Use It (Beyond Tacos)
Homemade taco seasoning is more versatile than people realize.

How to Store It
Store your homemade taco seasoning in an airtight glass jar away from heat and light. I love using small mason jars or spice jars with tight-fitting lids. It will keep its flavor for up to six months — though in my house, it never lasts that long.
If you notice any clumping, just give it a stir or a shake. That’s normal, especially in humid kitchens.
