- 2 tbsp sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 teaspoon garlic powder
- 1/2 tsp salt
- 1 cup buttermilk
- 1 egg
- 1/4 cup melted butter
- 1 1/4 cup shredded cheddar cheese use an Old Cheddar
- 2 tbsp chopped fresh chives or green onion
- 1 cup shredded zucchini see notes
Instructions
- Preheat your oven to 350 degrees.
- In a bowl, whisk together the flour, baking powder, baking soda, sugar, garlic powder and salt.
- In a separate bowl, whisk together the buttermilk and egg. Whisk the melted butter into the buttermilk mixture.
- Add the buttermilk mixture to the flour mix and gently combine, being careful not to over mix the batter.
- Use a tea towel to squeeze out the excess juice from the grated zucchini to prevent the bread from becoming too wet. Stir in the shredded cheese, squeezed zucchini, and chopped chives.
