  • Preheat your oven to 350 degrees.
  • In a bowl, whisk together the flour, baking powder, baking soda, sugar, garlic powder and salt.
  • In a separate bowl, whisk together the buttermilk and egg. Whisk the melted butter into the buttermilk mixture.
  • Add the buttermilk mixture to the flour mix and gently combine, being careful not to over mix the batter.
  • Use a tea towel to squeeze out the excess juice from the grated zucchini to prevent the bread from becoming too wet. Stir in the shredded cheese, squeezed zucchini, and chopped chives.
  • Line a 9 x 5 loaf pan with parchment paper and bake for 1 hour or until a toothpick inserted in the center of the bread comes out clean.

Notes

If the shredded zucchini is too wet, it may take the loaf longer to bake. It is recommended that the shredded zucchini be squeezed and patted dry with a tea towel after shredding to remove the excess juice.
