Making this Zucchini Casserole is Easy!
STEP 1. GRATE & CHOP
Gather all ingredients together for this delightful Zucchini Casserole. Begin by chopping one medium onion and grating 4 cups of zucchini using a hand grater, a grating attachment for a KitchenAid mixer, or any other grating tool you prefer. Next, grate an 8 oz. block of cheddar cheese, opting for freshly grated cheese for a smoother melt, though pre-shredded cheese can be used for convenience if preferred.
STEP 2. Start Combining Ingredients.
In a large bowl, combine all the ingredients except for the corn muffin mix and cheese. Mix everything thoroughly until it’s well blended.
STEP 3. ADDING JIFFY MIX & CHEESE.
Now, it’s time to incorporate the package of Jiffy cornbread muffin mix and three quarters (6oz.) of the shredded cheese into the mixture. Be sure to set aside one quarter (2oz.) of the shredded cheese for the topping later.
STEP 4. READY FOR THE OVEN.
Grease a 2-quart casserole dish with non-stick cooking spray, ensuring the casserole won’t stick during baking. Transfer the zucchini and cornbread mixture into the greased casserole dish, spreading it evenly. Now, it’s time for the finishing touch – sprinkle the reserved cheese on top of the mixture, adding that irresistible cheesy goodness. With the casserole all set and looking delightful, place it into the preheated oven, which should be set to 350 degrees F. Let the magic happen as the casserole bakes to golden perfection!
STEP 5. BAKING THE ZUCCHINI CASSEROLE.
Bake the Zucchini Casserole with Jiffy Cornbread Mix for 50-60 minutes, or until the cheese on top turns a delightful golden brown and becomes bubbly. To check for doneness, insert a knife into the center of the casserole, and if it comes out clean, your scrumptious dish is ready to be enjoyed!
